Day 3!

Day 3 was another pretty amazing day!

Of course, that could not be helped since we spent the afternoon at Schoodic.

For breakfast today I had a scrumptious bowl of oatmeal and amaranth with a sliced banana and a tablespoon of chunky peanut butter stirred in. 

For lunch, green bean and walnut salad for 2 clean food eaters (on the beach):

Dinner was barbeque tempeh, tangy basmati rice with lime instead of lemon and more garden salad with roasted sweet potatoes.

Tempeh marinating:
Honestly, I'm always trying to find a way to really love tempeh and I find that I only like it in things. This recipe held a lot of promise (marinated then simply baked) but alas, I think I will put the remainder in a stir-fry since I find it too bitter alone.

Tomorrow Sandi and I are hiking up Mt. Katahdin, the biggest, baddest mountain in Maine.  We had originally planned to sort of "skip" this day and eat our homemade granola bars with chocolate chips and call it good.  But, alas, it turns out we are a pair of CFC goody two shoes and we are going to go clean all the way. I made a big batch of CFC approved granola to munch on, more quinoa edamame salad, apples with nut butter, Lara bars and a lugget of nuts and raisins. 

I guess if we get hungry we can always munch on tree bark.  That must be on the list, right?

Great work, ladies!

I find that I like tempeh grated or broken up really small MUCH better than in large pieces. My kids also eat it this way as opposed to turning their noses up at it when whole.

I like tempeh in stews the best, it gets much more tender and chewy. I make a fake beef stew with tempeh that I'm going to try for the CFC with no roux. Had it baked plain last night and found a drizzle of olive oil made it more appealing. So hungry though, I probably would have eaten baked cardboard. Love your Katahdin pics!
